Considering that I had just cleaned out the house, I figured it was the perfect time to fill some of that empty space with a new appliance. So I bought us an electric griddle last week. While I was at Walmart, I also picked up a box of Aunt Jemima Buttermilk Complete Mix, syrup, and bacon – because who doesn’t love the smell of pancakes and bacon in the morning? I really love weekend mornings because as long as we have pancake mix, eggs, or bacon in the house, my husband will usually wake me up to the smell of breakfast being made. I’m a lucky gal!
I must admit that I’m not the best bacon maker. It’s either not done enough or burnt to a crisp. We both like our bacon on the crispier side, but with my bacon, I’m talking charcoal! So the bacon cooking is usually left to my husband. I’ve really, really been wanting to make bacon pancake dippers, so over the weekend, I enlisted my husband to help me make breakfast. As much as I love spending time with my husband in general, I love it even more when he’s helping me in the kitchen.
Early Saturday morning, we heated up the new griddle to make pancakes. While I fed the dog and made sure he was set for the morning, my husband cooked up some bacon in a cast iron skillet. While the bacon was draining, we mixed up some pancake mix and got to work on some pancakes and bacon pancake dippers.
- - Bacon
- - Pancake mix
- - Syrup
- Cook bacon to your liking. Drain and set aside.
- Use a little bacon grease to grease a skillet or griddle. Heat griddle on low.
- Mix pancake mix according to package and pour onto heated griddle in long strips.
- Once batter starts to bubble, add a strip of bacon.
- Cover bacon with more pancake batter (we found it easier to pour the batter over the bacon rather that spoon it over the bacon).
- Flip pancakes and cook another minute or two until done.
- Serve with syrup. Enjoy!
This handheld breakfast is relatively easy to make. Serve these bacon pancakes with a side of syrup for dipping. I think my weekend morning was happier just because of this breakfast! It’s one I’ll definitely have to make again (or at least get my husband to help me make)!
