You know how the New Year brings up all of those resolutions about eating healthier and cutting out certain foods like sugar, dairy, caffeine, and carbs? Well, I haven’t really resolved to do any of that.  Not really.  Before the holidays, I tried a couple new diets.  One was a disaster and actually made me gain weight.  Cutting carbs wasn’t so bad. But when the holidays came around, I let myself cheat.  It was bad like, “Give me all the sugar, all the carbs, all the bad stuff I can get my hands on because it’s Christmas and I deserve to be happy!” 

Now it’s January and I’ve become one of those people who is feeling guilty about all of the gluttonous things I’ve done over the holiday season.  I’ve been trying my best to stay away from certain things like processed foods, sugar, and carbs.  Carbs is probably the hardest of them all.  I am a girl who was born to love pasta, pizza, and all kinds of bread.  But I’ve learned how to balance those things to, at least, try and lead a healthier lifestyle.  So if I have to have bread, I do it in the morning before Hunter and I go on our daily walk.

Everything Seasoning

If there’s one breakfast food that gets me every time, it’s an everything bagel with cream cheese.  It’s not necessarily the bready bagel part, but the everything seasoning that tastes so good. Recently, after realizing that a packaged everything seasoning didn’t exist, I made my own.  It was New Year’s Eve and I was planning, like every year, to serve nothing but appetizers for dinner.  I used a package of crescent rolls and some hot dogs to create pigs in a blanket.  But I had also picked up a bunch of different ingredients to create my own everything seasoning to throw on top.  It turned out to be pretty darn good!

That jar of everything seasoning still exists in my kitchen.  I haven’t had much use for it after those pigs in a blanket – until recently.  I went through a popovers phase last year where I used my pan for everything.  I made savory popovers like garlic bread popovers and made sweet popovers using homemade pumpkin puree and raspberry jam.  Since popovers are so easy to make, I decided to bake up a batch of everything popovers to have with eggs at breakfast or as a fast side for dinner.  With the everything seasoning on top, they’re almost like fluffy, little bagel bites!

Ingredients

    For the everything seasoning
  • Poppy seeds
  • Sesame seeds
  • Minced onion
  • Garlic powder, or minced garlic
  • Sea salt
  • For the popovers
  • 2 eggs
  • 1 cup all-purpose flour
  • 1 cup milk
  • 1/2 tsp. salt
  • Everything seasoning
  • Non-stick cooking spray

Instructions

    For the everything seasoning
  1. Pour ingredients equally into a jar and combine.
  2. Keep seasoning sealed in a cool, dry place.
  3. For the popovers
  4. Preheat oven to 450º.
  5. Spray a popover pan with non-stick cooking spray.
  6. Gently beat the eggs in a medium bowl.
  7. Whisk in flour, milk, and salt just until a smooth batter forms. Do not over-whisk.
  8. Pour batter into the popover pan, filling halfway.
  9. Sprinkle everything seasoning generously on top.
  10. Bake popovers for 20 minutes, then reduce heat 350º.
  11. Bake popovers for another 20 minutes or until tops are golden brown.
  12. Remove popovers from pan while warm and serve with butter.

Popovers are really easy to make and best served warm.  Serve them right out of the pan or warm them again in the oven before serving.  Keep the everything seasoning in a tightly sealed jar and use to season dishes and other bread recipes.  Enjoy!
