It’s funny how our tastes change over the years.  When my husband and I first started dating, we went out to eat a lot.  Neither one of us were the home cooks that we are now.  Date night was often spent at a local restaurant.  Then, it happened.  My husband asked me to move in.  I had been spoiled living at home with two parents who really know how to cook!  So I decided that I had to put my chef hat on and learn how to make a decent meal!

Seven years later, my husband and I rarely go out to eat.  We’re now spoiled by our own cooking skills and the desire to prepare food our own way. During the summer, we love to cook out on the grill and use fresh ingredients from our garden.  Even though my husband is the resident grill master, I like to surprise him with dinner on the grill every so often.

We love getting creative with our meals so we don’t end up eating the same dishes over and over again.  I love fusion foods that take inspiration from different places and turn those multi-cultural ingredients into one delicious dish.  So I fused my love for Asian lettuce cups with Italian flavors together one night for dinner.  

I headed to ACME to grab ingredients to make easy grilled pork lettuce cups using Hatfield Dry Rub Seasoned Tuscan Herb Pork Tenderloin and fresh ingredients.  My husband knows that I love a meal made with lots of veggies and I know that my husband loves the way pork tastes on the grill.

This dish was a definite win-win for both of us!  It’s one I can see myself making over and over again this summer!  It was a perfect meal to enjoy outside on the deck.  This time of year, I love eating outdoors when the weather is nice.  Dining out on the deck almost makes dinner at home feel like a date night out!



This recipe starts with farm fresh Hatfield Dry Rub Seasoned Tuscan Herb Pork Tenderloin sliced into thin medallions and placed on the grill.  Slicing the tenderloin allows it to cook quicker and makes it the perfect size for a lettuce cup!  I like to use Boston lettuce since it’s the perfect size and shape to make a lettuce cup.

Next comes the fresh, Tuscan-inspired ingredients!  These lettuce cups are topped with a medley of veggies like carrots, red onion, and chopped zucchini.  The final touch is a sprinkle of Peruvian cherry peppers (these are tiny, sweet peppers found in olive bars that are great in all sorts of dishes!) and a drizzle of balsamic glaze.

These Hatfield Tuscan Herb Grilled Pork Lettuce Cups are a perfect summer meal that’s light and refreshing, full of flavor, and fun to eat, too!

Hatfield Tuscan Herb Grilled Pork Lettuce Cups

Ingredients

  • 1 Hatfield Dry Rub Seasoned Tuscan Herb Pork Tenderloin, sliced into thin medallions
  • 2 small carrots, peeled and cut into matchsticks
  • 1 small head of Boston lettuce, leaves cleaned and separated
  • 1 small zucchini, peeled and chopped
  • 1/4 red onion, chopped
  • 1/4 cup Peruvian cherry peppers, optional
  • Balsamic glaze

Instructions

  1. Preheat grill on a medium-low flame.
  2. Cook pork medallions for about 4 minutes on each side.
  3. Add a couple lettuce leaves to each plate.
  4. Plate 2-3 pieces of pork on top of the lettuce leaves.
  5. Top with fresh carrots, zucchini, and red onion.
  6. Add a sprinkle of Peruvian cherry peppers on top and drizzle with balsamic glaze.

My husband and I really enjoyed this meal! The pork was tender and bursting with delicious Tuscan Herb flavor and the fresh veggies added a nice, crunchy texture. Hatfield currently has a new line of marinaded meats that are perfect for grilled summer dishes, like these lettuce cups!
