Every once in a while, I find myself craving something that will mess up my healthy eating goals. Carbs, pasta, and snacks are where I can totally fall off track. But, damn, do they taste good! There’s also a breakdown of everything we received in the box, including five different recipes to make. We also got a Kitchen Companion that includes a fun, little playlist you can listen to on Spotify, some other info on how you can use the ingredients in your box, plus info on how you can recycle the packaging (thought that was kind of awesome).

I love that Hungryroot has partnered with so many great brands that I already love and purchase on the regular. But there are also so many new brands to discover, as well! Like those Unreal Dark Chocolate Almond Butter Cups. I ate them the day our box arrived and went to Whole Foods the next day to grab more. They were that good!

But what happens if you get something in your box that you weren’t too fond of? Well, you can go into your food preferences and mark that you never want to see it in your deliveries again! And if you’ve found something that you really, really like, you can make sure that it shows up in your deliveries again and again!

Thai Peanut Grain Bowl

You know what I really, really liked? The Thai Peanut sauce that was used in this recipe! I usually ditch the recipes and like to come up with my own ways to use the ingredients. But this time around, I decided to try Hungryroot’s suggestions! The first thing I made was a grain bowl.

First, I heated the Seven Veggie Stir-Fry in a skillet with a little olive oil. The recipe called to add the Savory Spiced Tofu Bites next, but I wanted to save them for something else. So I used the Braised Lemongrass Tofu Nuggets instead.

As that all cooked, I heated the Seven Grain Blend and spooned it into bowls. Then, I topped the Seven Grain Blend with the stir fry and drizzled some Thai Peanut Sauce on top (I could eat that stuff with a spoon!). Delicious and it took minutes to make!

All of the food and recipes have been unbelievably delicious! It’s made keeping my healthy eating habits so easy! If you need some inspiration to cook and eat healthier, this is a great way to start! Hungryroot will help you customize a meal plan no matter what your goals are!

We tried the new Hungryroot with new packaging and healthy food products! Take a look at what was inside our box + a couple of the dishes we made with Hungryroot ingredients!

THE NEW HUNGRYROOT

My husband and I tried Hungryroot for the first time last year. At the time, I was just looking for convenient, healthy foods to include as sides and snacks. I truly enjoyed the fresh variety of healthy dishes and ingredients that were sent our way. The portions included also lasted us a while!

Recently, Hungryroot reached out to me to try their box again. Since my last review, the company has made some changes. You might have noticed their new logo and packaging, but they’ve also made changes to the healthy food products available through their program.

Hungryroot is a way to easily incorporate healthy food into your busy lifestyle.

The first time we tried Hungryroot, it seemed like it was targeted towards vegans and vegetarians. Therefore, a lot of the dishes we received were used mostly has sides to our main protein chose for meals. This time around, it’s all changed! Now, you can choose from a variety of protein options available like tofu, beans, chicken sausages, and smoked salmon.

I was excited to see some of the new products Hungryroot included in my box. Before I show off the goods, you should know that you can tailor your deliveries according to your dietary needs. Vegan or vegetarian? Sub in plant based proteins. Gluten-free? They’ve got you covered with lots of yummy options. Plus, everything is already prepped and ready to be cooked in less than 10 minutes!

That’s a whole lot of food! And the portions are so big! Seriously! The packing list came with two recipes to make with some of the ingredients in our box. After enjoying those delicious dishes, we still had a ton of food leftover!

CARAMELIZED BRUSSELS ARTICHOKE FLATBREAD

The first recipe I tried was the Caramelized Brussels Artichoke Flatbread. It’s made with the Whole Wheat Sprouted Flatbread, Spinach Artichoke Chickpea Dip, and Shaved Brussels. Bake the flatbread for five minutes. Then, spread with Spinach Artichoke Chickpea Dip. Saute the Shaved Brussels in a little olive oil and top the flatbread with them. Such an easy, flavorful dish that took minutes to make!

PESTO SALMON RICE BOWL

We also tried the Pesto Salmon Rice Bowl. I’m usually not a big fan of salmon, so I was sure my husband would be eating this by himself. My mind has totally been changed about salmon! Apparently I just needed to try smoked salmon to enjoy it!

The Hot Smoked Roasted Salmon is fully cooked with a nice, smokey flavor. The Brown Rice Quinoa Blend is so convenient and cooked in just 90 seconds! The Kale Pesto is nut-free and dairy-free, but full of that great, herb-filled pesto flavor! It’s a great little dish to enjoy for lunch or dinner!

There’s not a food in this box that we haven’t liked (and I love the convenience of these ready-to-cook products)! I’ve had so much fun incorporating these products into healthy dishes and snacks for us!

My Hungryroot Review – Not Your Average Subscription Plan

Every once in a while, an ad for a new product graces my Facebook feed and makes me think, “Hmm…I’ve got to try that!” That’s basically what happened when I saw an ad for Hungryroot. As someone who is always looking for creative new ways to make healthy dishes for the hubs and me, this seemed right up our alley. A friend of mine recently shared her Hungryroot delivery on Instagram and I had to know more about it. After texting back and forth about the meals in her order, I decided to sign up.

Is Hungryroot a good deal?

A week later, my order arrived at our door! Unlike other meal subscription boxes, Hungryroot pretty much prepares everything for you. Plus, you get to choose everything you want in your box. There’s minimal preparation involved with the meals and the only extra ingredients you’ll need are salt, pepper, water, and olive oil. The snacks that I picked were ready to eat upon arrival. So easy!

Hungryroot recipes I enjoyed!

I could not wait to dig straight into the container of Almond Chickpea Cookie Dough! It’s an eggless cookie dough that you can eat raw or baked into cookies. There was no way I was baking any cookies with this cookie dough! I’ve been enjoying it with a spoon! Despite being made with chickpeas, it tastes exactly like chocolate chip cookie dough!

I also got a container of Vanilla Bean Snickerdoodle Dough. It’s hard to believe that this stuff is made with white kidney beans because it tastes just like a Snickerdoodle cookie! Even though I’ve enjoyed a couple spoonfuls of this dough, I might actually use it to bake up a batch of cookies.

This time of year, I can’t get enough of lemon desserts! So I was excited to try the Coconut Lemon Pie Bites. They’re ready to eat right out of the package and remind me of lemon meringue pie with a coconut twist. So good!

Since I was done stuffing my face with snacks, I decided it was time to get the hubs in on the action. Our house definitely isn’t vegan or vegetarian (although I do love a good veggie loaded meal from time-to-time). So the meals that I got in our box would either become lunches for me or side dishes for dinners. My once picky, now adventurous, semi-foodie husband has been down for trying some of my new vegetarian creations lately, so I knew I could at least get him to taste the meals in the box. Like he says, “I don’t really care what it’s made with as long as it tastes good.”

First up was the Lemon Kale Caesar Salad. I pretty much knew this would be a win for both of us. I mean, who doesn’t like a good Caesar salad? This salad is made with a Kalebeet Blend, Lemon Artichoke Quinoa Bowl, and Chickpea Alfredo. You mix the Kalebeet Blend with the Lemon Artichoke Quinoa Bowl. Then, you make your dressing with the Chickpea Alfredo, olive oil, salt, pepper, and a little water. The salad was awesome and still so good the next day! We both really enjoyed it!

I really, really wanted to share my box with you, so I haven’t had the chance to try everything yet because it’s a lot of food. However, everything I’ve tried so far has been a total win! I’m pretty confident that we’ll love the rest of the meals, too! So what’s left to make? The Cheesy Butternut Squash Fries, Cherry Chia Maple Oatmeal, Sweet Potato Pad Thai, and Roasted Red Pepper Quinoa Bowl.

The Cherry Chia Maple Oatmeal is going to make an awesome heat and eat breakfast. Hungryroot says it’s a tasty combo of protein, sweet, and tartness to get your morning going. They also suggest turning it into a parfait, which I’m totally digging! I ordered an extra Lemon Artichoke Quinoa Bowl, so that and the Roasted Red Pepper Quinoa Bowl will make delicious side dishes with dinner with leftovers for lunch the next day.

I’m also really eager to try the Cheesy Butternut Squash Fries. They’re baked and then topped with a Cashew Cheddar. I recently turned cashews into cookie butter, so it’ll be interesting to see how they work as a cheese sauce! That just leaves the Sweet Potato Pad Thai, which I know will be amazing because Pad Thai is absolutely delicious! This one’s made with sweet potato ribbons, snap peas, and Thai Peanut sauce.

Here’s the cool thing about the sauces. If you love them, there’s more than enough in the containers to use in other dishes!

So what’s the verdict? So far, so good and Hungryroot’s ordering system is pretty flexible. I’ve skipped the next couple of weeks just so we can make and eat everything we’ve already got in the fridge. It’s definitely not a subscription I would use on a weekly basis unless I was fully committed to a vegan or vegetarian lifestyle, but it’s pretty damn tasty!

Spicy Beyond Meat Taco Burger

You won’t miss the meat with this flavorful Spicy Beyond Meat Taco Burger recipe! It’s a perfect meal mashup for Meatless Monday, Taco Tuesday, or any day of the week!

There’s a meat shortage going on and it’s not much of a problem for me (for my husband, that’s another story). I went vegetarian for a few years back in my 20’s. Now, I still enjoy plant proteins and meatless meals. Back when I was vegetarian, I was doing it, not only for my health, but as a stance on animal rights (hello, college years).

These days, I’ve incorporated meatless meals into my diet mostly for my health, but also because I truly enjoy eating these meat substitutions. It allows me to cut down on my meat intake while still getting an appropriate amount of protein. Plus, it encourages me to use a lot of fresh ingredients.

Spicy Beyond Meat Taco Burger

Grilling season is back and I’m so ready to sink my teeth into a juicy burger. Any juicy burger! I’ve become a big fan of Beyond Meat products this past year. In fact, I think they’re the best meatless products on the market right now.

If you’re trying to cut down on meat, but not the flavor, Beyond is it! The first time I tried one of their patties, I was shocked to find that it had the same consistency and flavor as a regular beef burger.

I was able to get a package of Beyond veggie based crumbles in one of my Hungryroot boxes. Even though they offer the patties, I wanted to be able to make my own and add in additional ingredients.

After making my Black Bean Taco Salad, I had some of my homemade tortilla strips leftover. I was immediately inspired to make a taco style burger mixed with hot sauce, taco seasoning, and shredded cheddar. Once the burgers were cooked, I topped them with lettuce, more cheese, tortilla strips, and salsa!

Spicy Beyond Meat Taco Burger

Yield: 4

Spicy Beyond Meat Taco Burger

Ingredients

1 package ground Beyond Beef
1 1/2 tbsp. taco seasoning
1/4 tsp. ancho chili powder
Splash of Tabasco sauce
1/4 cup shredded cheddar cheese
4 burger buns
Optional toppings: cheddar cheese, salsa, tortilla strips, lettuce, guacamole, sour cream

Instructions

Preheat grill to medium-high heat.
Mix the ground Beyond Beef, taco seasoning, ancho chili powder, Tabasco sauce, and cheddar cheese in a bowl.
Form the mixture into 4 burger patties.
Grill burgers for 3 minutes on each side, or until browned with grill marks.
Toast buns and place a burger on each bun.
Top with more cheddar cheese, salsa, tortilla strips, lettuce, guacamole, or sour cream, if desired.

If you’re not a fan of spicy food, you can omit the Tabasco sauce completely. I just put enough of it in the burger mixture to give it some good flavor. If you’re not big on meatless proteins, you can totally make a good old fashioned beef burger with this seasoning blend. Want to get real crazy? Serve this burger in a soft tortilla!
