My husband had off from work today. I used to moan and groan with jealousy over the abundance of time he got off. Now being home, I anticipate it. I like being able to spend the whole day with him, especially since he works so much overtime during the week. It wasn’t like we even did anything extra special today. I just thoroughly enjoyed having him around.
Mike slept in this morning, but I eventually woke him to let him know I was going to make French toast for breakfast. I used Pepperidge Farm Caramel Apple Swirl Bread to make our French toast and poured us each a glass of strawberry orange banana juice. It was a sweet and delicious start to the morning. Afterwards, we got cleaned up and dressed and cleaned my car together. I even managed to spray myself in the face with the hose. I always provide the entertainment!
It was a beautiful morning so we rode our bikes to AllState to see if we could finally get our insurance situation straightened out. Not yet, but we were assured that it will all be taken care of by Saturday. We got home just around lunchtime. Mike walked to the deli and picked up a sub for us to share. After lunch, we went to the police station to pick up the accident report from the hit and run I was involved in. The man who hit me has been ticketed with fleeing the scene of an accident and failing to report the accident. Unfortunately I will be back at the station tomorrow to talk with the officer who took my statement. We didn’t see any insurance information for the man who hit me. If he doesn’t have insurance, I need to talk to the courthouse about pressing charges. It never ceases to amaze me that I try my hardest to stay away from drama, but it keeps following me!
Mike went to run to a couple places after lunch and I hung around the house. I made an eye appointment for next week (hooray for good insurance coverage finally!), turned on season two of The Big Bang Theory and decided to bake. I make baked maple pumpkin mini donuts and muffins. Follow this recipe, subtract an egg, add a big splash of maple syrup and substitute the cinnamon for pumpkin pie spice. Bake in mini muffin pans or mini donut pans for about 25 minutes or until they’re baked through and slightly browned. Then roll in cinnamon sugar while warm. Let cool on a wire rack and enjoy. The recipe makes a lot though so be prepared to share!
Once the kitchen was cleaned up from donut making, it was about time to start on dinner. I had some leftover spaghetti from dinner the other night so I made Cheeseburger Spaghetti Pie. Instead of onions, I added a garden pepper. I did without the bacon pieces and dill pickles. Mike seemed iffy at first about the dish (“cheeseburger pie????”), but when he asked for leftovers for lunch tomorrow I knew it was a hit. After dinner, we took out the air conditioner in our bedroom and we’ve parked ourselves in the living room since. The blankets are out since the nights are getting chillier. I’m thinking chai tea tonight, some yoga pants and a snuggle might be nice. But for now, I have an e-mail to respond to and a nice, hot shower I want to get to!
