The more I use our air fryer, the more I love it! Not only is it a healthier way to get that crispy, fried flavor in food without the grease, but it makes cooking fast and easy! Especially when you make seafood in it. We had some coconut shrimp breading to use (I had bought a big container at Sam’s), so I decided to try making coconut shrimp in our air fryer. I’ve made it a couple more times since then because it’s just that good!
If you can’t find premade coconut shrimp breading, you can make a simple breading with shredded coconut, Panko, and seasonings. Double coat large shrimp and air fry for 8-10 minutes. You’ll end up with perfectly cooked shrimp with a crispy coconut coating! Serve the shrimp with an easy two ingredient apricot dipping sauce for an amazing appetizer or dinner!
