Antipasto Salad Skewers

These Antipasto Salad Skewers are a fun way to serve this loaded Italian salad made with cheese, meat, olives, peppers, tortellini, and lettuce!
 

Antipasto Salad Skewers

A few weeks ago while going through my Instagram feed, I stumbled upon a photo posted by Danielle of Sometimes Sweet featuring a delicious looking plate of antipasto skewers.  I decided to recreate her “salad on a stick” for a weekend family barbecue.  They were a hit even before they were served! Who doesn’t love food on a stick???
 
With the left over ingredients, I threw together a tortellini pasta salad and a regular green salad.  We had a feast of homemade hamburgers, hot dogs and sausage with peppers, onions and potatoes served with crusty Portuguese rolls.  So much yum!  And for dessert, Mom made her homemade cream puffs that are always delicious!

Antipasto Salad Skewers

Ingredients

  • Iceberg lettuce
  • Sliced salami (or prosciutto)
  • Bocconcini (small fresh mozzarella balls)
  • Peppadew peppers
  • Black olives
  • Cheese tortellini, cooked according to package and cooled
  • Bamboo skewers
  • Balsamic dressing

Instructions

  1. Tear chunks of lettuce, fold and skewer onto stick.
  2. Fold salami in half, then fold in half again and skewer.
  3. Alternate bocconcini, peppadew peppers, black olives and tortellini until desired amount of skewers are made.
  4. Drizzle with balsamic before serving or serve dressing on the side.
