Apple Pecan Quinoa Breakfast Bowl

Power up your day with this Apple Pecan Quinoa Breakfast Bowl! It’s made with wholesome ingredients and a touch of sweetness for a satisfying start!

Breakfast. It’s the most important meal of the day. But did you know that snacks in-between meals are pretty important, as well?  Last year, I did the Fast Metabolism Diet for about the first half of the year. Even though I haven’t continued with it, I learned a lot about healthy eating habits along the way.  See, three meals a day aren’t enough.  This is something my husband’s been telling me for years!  Snacks help us stay satisfied in-between meals and keep you from overeating at meal time.  Depending on what you’re eating, snacks can also help to fire up your metabolism!

Oddly enough, I was never much of a snacker before I moved in with my husband.  His snacking habits aren’t always healthy, but his metabolism is like a crazy inferno!  The new year helped us make the decision to keep much healthier snacks in the house.  Plus, we’ve both realized that we’re not getting any younger and, with that, our bodies are changing and craving better things.  So even though the sugar and those pesky potato chips still want to call out to us on occasion (we’re only human!), our snack drawer and fridge have gotten a pretty decent revamp!

Lately, I’ve been filling our kitchen with snacks like yogurt and bananas, carrots and hummus, apples and almond butter, and nut mixes. So when ShopRite recently sent me a sampler box of snacks from their Wholesome Pantry line, I was very eager to receive them!  We shop at ShopRite on a weekly basis, so I’m pretty familiar with some of their best-selling and award-winning Wholesome Pantry products.  I’ve bought a couple of their snack mixes before, but every single product they sent me was something new to discover!

If you’re not familiar with ShopRite’s Wholesome Pantry line, it debuted about a year ago in their stores.  Their mission is to provide ingredients and snacks that are free from 110 preservatives, additives, and colors.  Their organic line is USDA-certified.  The simple ingredients used in Wholesome Pantry products make snacking smart, flavorful, and entirely satisfying!

I was very excited to get the Wholesome Pantry Almond Butter in the box!  It’s so creamy, spreads beautifully, and mixes well in things like yogurt and oatmeal!  It’s also great to use as a dip for apple slices (my favorite way to eat it!).  The Wholesome Pantry Organic Energy Mix is a tasty mix of sunflower seeds, raisins, dried cranberries, soy nuts, dried apples, almonds, and walnuts.  It’s a little salty and a little sweet, making it a very satisfying snack!

One of my new, favorite snacks is the Wholesome Pantry Freeze Dried Fuji Apple Fruit Crisps!  They come in a cute, little bag that are great for on-the-go snacking.  They’re sweet with a satisfying crunch! Another new favorite is the Wholesome Pantry Organic Crushed Pepper and Truffle Oil Popcorn.  It tastes like it’s been freshly popped with a drizzle of truffle oil (so fancy!) and a sprinkle of crushed pepper for just the teeniest bit of heat.

The last snack in the sampler box was Wholesome Pantry Organic Pecan Halves.  Pecans are one of my favorite nuts to snack on.  I love using them in baked goods and homemade snack mixes. Of course, I thought it might be fun to take my new bag of pecans and use them in a breakfast-meets-snacking recipe with some of the other snacks I received!  So I made one of my favorite meals – a quinoa bowl.  But I made it more like a sweet oatmeal than a savory Buddha bowl!

Apple Pecan Quinoa Breakfast Bowl

Ingredients

  • 1/2 cup rainbow quinoa, cooked
  • 2 tsp. Stevia sweetener
  • 1 small green apple, diced
  • Ground cinnamon
  • 1/4 cup Wholesome Pantry Organic Pecan Halves
  • 1 generous tbsp. Wholesome Pantry Almond Butter

Instructions

  1. Cook the quinoa as directed. Allow quinoa to cool and place 1/2 cup into a small bowl.
  2. Stir in 1 tsp. of Stevia sweetener.
  3. Add a small amount of water to the bottom of a small saucepan, basically to just cover the bottom.
  4. Heat the water over medium and add the diced apples.
  5. Sprinkle a little ground cinnamon plus the other teaspoon of Stevia sweetener over the apples. Stir to combine and cook just until softened. Remove from heat.
  6. Begin assembling your quinoa bowl. Add Wholesome Pantry Organic Pecan Halves to one side of the quinoa bowl.
  7. Then, add the cooked apples into the other side of the bowl.
  8. Spoon Wholesome Pantry Almond Butter down the middle of the bowl and serve!

I have to admit that I wasn’t always a fan of sweet breakfasts. However, this is one sweet, little breakfast that I’ve totally gotten into! It’s a wholesome way to start the day with a touch of sweetness and ingredients to keep you satisfied!

    Wow, this definitely looks healthy and yummy, unfortunately, I don’t take the time to make the time to have a sit down breakfast, but this might be an incentive to do so on the weekends.
