After making my Peach, Prosciutto, and Arugula Pizza, I found myself snacking on slices of peaches wrapped in prosciutto. It had me thinking, “What other meats could I wrap around fruit?” So then I got a container of pineapple spears and a package of bacon in a recent Hungryroot delivery and – boom! – this recipe was created.
Salty-sweet combos will always be my favorite! And if I can take advantage of what’s left of fresh summer fruit by wrapping it up in something salty and savory, it’s a win for me! So I took my container of pineapple spears and wrapped them with strips of bacon brushed with maple syrup for a “candied” touch.
The great thing about these bacon wrapped pineapple spears is that they can be enjoyed as an appetizer, a breakfast side, or a snack! Pop them on a bamboo skewer for easy eating and you’ve got yourself a delicious sweet and savory summer treat!
Easy Bacon Wrapped Pineapple Spears
These Easy Bacon Wrapped Pineapple Skewers are perfect for summer entertaining or snacking. All you need is fresh pineapple, strips of bacon, and a little maple syrup to whip up this delicious recipe!
The first thing we need to do is prepare a baking sheet with foil and set a wire rack on top. You don’t necessarily need to use bamboo skewers, but I think they make the pineapple easier to eat. So if you’re using them, soak them for 30 minutes prior to making this recipe.
Then, start preparing the pineapple. The pineapple from Hungryroot is already cut into spears so the prep work was already done for me. All I needed to do was push a skewer into each pineapple spear.
Next, I wrapped a piece of bacon around the pineapple. I absolutely love the pork bacon from Hungryroot! It has a nice seasoning on it that almost gives it a slightly sweet flavor even though it’s sugar free.
We’re going to add an extra layer of sweetness to this recipe by brushing the bacon with a little maple syrup. I’ve never had candied bacon before (sacré bleu!), but I imagine that maple syrup gives it a similar flavor.
Now, pop the bacon wrapped pineapple in the oven and cook for about 20-25 minutes, or until the bacon is done to your likeness, flipping halfway through cooking. Allow the pineapple to cool slightly before serving.
- 1 - 16 oz. container pineapple spears
- 6-8 pieces Dry Rubbed Pork Bacon
- 1.5 oz. Organic Vermont Maple Syrup
- Optional: bamboo skewers
- Preheat the oven to 400º. Prepare a large baking sheet with foil and set a wire rack on top. If using bamboo skewers, soak for 30 minutes prior to using.
- Push a bamboo skewer into each pineapple spear.
- Wrap each pineapple spear with one bacon slice
- Then, lay seam side down onto the wire rack.
- Brush the maple syrup onto each pineapple spear.
- Bake for 20-25 minutes, or until the bacon is cooked and crispy to your liking, flipping halfway through.
- Let the pineapple cool slightly before serving.
Want to add a little kick to these pineapple spears? Lightly sprinkle the pineapple with cayenne before serving!
All I can say about this recipe is – SO FREAKING GOOD! Make sure to store the leftovers in a sealed container in the fridge for 3-5 days.
