Chicken Gyro Salad with Pita Croutons

This Chicken Gyro Salad is made with all the fixings you would find in a chicken gyro. Plus, it’s topped with crispy homemade pita croutons and a drizzle of tzatziki sauce!

I recently made gyros for dinner.  I made them with chicken, tomatoes, lettuce, cucumber, onion, feta cheese, tzatziki, and pita bread.  They were such a hit!  My husband and I ended up splitting leftovers for lunch the next day.  He had a chicken gyro, but I took the leftovers and made a salad.

I took the rest of the Romaine lettuce and chopped it up for my base.  Then, I chopped up the chicken, tomatoes, cucumber, onion, and feta and added it to the salad.  Instead of croutons, I cut up pita bread and toasted it in the oven.  Then, I finished the salad with a drizzle of tzatziki sauce.

The craving for this salad was real recently.  So I ordered groceries from Hungryroot.  And just like last time, we had chicken gyros for dinner and I had a chicken gyro salad for lunch the next day.

Every bite of this salad is delicious!  But there were two things that really stood out for us – the Organic Dairy-Free Tzatziki (my husband couldn’t get enough of it) and the pita croutons.  They’re kind of like a teeny-tiny pita chip that adds just the perfect amount of crunch to this salad.

While a regular chicken gyro does hit the spot, half of it usually ends up dropping on my plate and I end up eating it with a fork anyway.  So this salad is a great way to get that fresh, Mediterranean flavor minus the mess!

We’re going to start this salad by making the croutons.  Now you can totally make these in the air fryer.  Cook them at 360º for 10 minutes.  But this time around, I made them in the oven.

So I cut the pita bread into small pieces and tossed them in a bowl with olive oil, garlic powder, and salt.  Then, I spread them evenly on a baking sheet and baked them at 400º for about 10 minutes.

Now, we’re going to cook the chicken.  Heat olive oil in a skillet over medium heat.  Add the chicken strips and cook for 10-12 minutes, or until cooked through.  Set aside.

Let’s build the salad!  Add the lettuce to a salad bowl.  Then, top with the chicken, onion, cucumbers, tomatoes, feta cheese, and tzatziki.

Don’t forget the pita croutons!  Once they’ve been sprinkled on top, serve the salad and enjoy.

Chicken Gyro Salad with Pita Croutons

Ingredients

    For the pita croutons:
  • 1 pita bread, cut into small pieces
  • 1 tbsp. olive oil
  • 1 tsp. garlic powder
  • Salt, to taste
  • For the salad:
  • 1 tbsp. olive oil
  • 1/2 cup chicken strips
  • 1 bunch baby Romaine lettuce, cleaned and chopped
  • 1/4 cup red onion, sliced thin
  • 1/4 cup mini cucumbers, halved
  • 1/2 cup grape tomatoes, halved
  • 1/3 cup crumbled feta cheese
  • 2 tbsp. Fabalish Organic Dairy-Free Tzatziki
  • Pita croutons

Instructions

    For the pita croutons:
  1. Preheat oven to 400º.
  2. Add the pita bread pieces to a small bowl. Then, toss with the olive oil, garlic powder, and salt.
  3. Place on a baking sheet and bake for about 10 minutes, flipping halfway through, until golden brown and crispy.
  4. Allow pita croutons to cool completely. Then, use as a salad topping.
  5. For the salad:
  6. Heat olive oil in a skillet over medium heat. Add the chicken strips to the skillet and cook 10-12 minutes, or until cooked completely through. Set aside.
  7. Add lettuce to a large salad bowl. Then, add the chicken, onion, cucumbers, tomatoes, feta cheese, and tzatziki on top.
  8. Finish with the pita croutons and serve.
