|Cucumber juice cubes in seltzer|
Lately I have received more cucumbers from my father-in-law’s garden than I know what to do with them. He has so many coming up right now that he doesn’t know what to do with them either! Over the weekend, I was given three more cucumbers from his garden. Instead of planning another batch of tomato and cucumber salad, I decided to make cucumber juice and freeze it in an ice cube tray to drop into water for a refreshing beverage.
Using two of the cucumbers I was given, I peeled them, cut them into chunks and threw them into my food processor. I added the juice of two limes, fresh mint and fresh stevia from my herb garden. I blended the ingredients together until the mixture turned into a liquid consistency. Over a bowl, I strained the juice, pushing the pulp down as needed. I poured the juice into an ice cube tray and put it in the freezer.
While these cucumber juice cubes are pretty refreshing in a simple glass of cold water, you can also use a few cubes in seltzer (try it in Polar’s Mint Mojito seltzer). They might also be nice crushed up as a mojito-like slushie (add rum or keep it virgin)!
