Now that the alfalfa sprouts are grown, it’s time to enjoy them. I love eggs for breakfast. They’re easy to make first thing in the morning, a good source of protein and such a versatile food that can be paired with so many different flavors. I love them cooked over easy, usually with something on the side for dipping. My sprouts took the main stage the morning after they were fully grown adding a delightful texture to a breakfast favorite. Paired with avocado and goat cheese, it was a perfect start to the morning!
I cooked two eggs over easy, seasoned with salt and pepper and laid them on top of a bed of alfalfa sprouts. Then I sliced an avocado, laying four slices on top of my eggs. To finish my dish, I sprinkled crumbled goat cheese on top.
This dish was fresh and satisfying with the creaminess of the eggs, avocado and goat cheese and the crunch of the alfalfa sprouts. Serve with a toasted English muffin and tea to really top off your morning!
