If you follow me on social media, you know that I’m obsessed with my garden. I have a daily routine when it comes to my work schedule, but also when it comes to my garden. In the morning, before I start my work day, I like to go outside while it’s nice and quiet to enjoy the peace in my backyard. I water my plants, pick berries, check for veggies ready to be picked, and see how my herbs are doing.
We have double the amount of veggies this year thanks to having two gardens (one at home and one at the in-law’s). So far, we’ve been very lucky with both of our gardens. Lately, our tomatoes are starting to turn red one after the other, and our cucumbers are growing at a steady rate.

Salads are one of my favorite things to eat during the Summer, so I decided to take our fresh tomatoes, cucumbers, and herbs to create a simple, summer salad. All you really have to do to make this salad is chop everything up and throw it in a bowl. I don’t know about you, but I find chopping to be therapeutic!
Fresh Tomato, Cucumber, and Herb Salad
Ingredients
- 2 medium tomatoes, chopped
- 1 medium cucumber, chopped
- Crumbled goat or feta cheese
- Fresh herbs: parsley, basil, rosemary, chives, chopped
- 1 lemon, juiced
Instructions
- Add chopped tomato and cucumber in a bowl
- Add a small handful of chopped fresh herbs in salad and combine.
- Sprinkle salad with crumbled goat or feta cheese.
- Drizzle fresh lemon juice over salad and gently toss.
- Serve as a fresh Summer side salad. Enjoy!
