Goodness and Gratitude

This week has been a good week so far and it’s only begun.  My husband had another three day weekend so it was nice having him home a little longer.  He works such long days and I only really get to see him for a few hours at night at then the weekend.  

Last night we had a Target date to look for some new throw pillows.  That turned into a Starbucks/Target/Marshall’s date.  We left nearly empty-handed aside from my salted caramel hot chocolate and a gift bag.  What can I say?  We’re big spenders!  

No sooner did I just sit down to get comfortable when we got home that I was asked to go on a walk.  At first I was reluctant – I was already in my yoga pants!  But seeing the eager look on my husband’s face to enjoy the unseasonably pleasant night before his return to work, I threw on sneakers, a hat and a jacket.  

We looked at Christmas lights and talked about my love for winter and things I’d love to do in the cold (snowmobiling, anyone?).  When we got home, he went on the computer for a little bit, but then joined me to watch TV.  I was pretty surprised when he was actually paying attention to Bridget Joness Diary.  Lately he’s been paying attention to my chick-flicks rather than pretending to and falling asleep on the couch.  I’m proud!

Tonight we’re celebrating my father-in-law’s birthday.  I had a sluggish start to the day after waking up earlier than I wanted to this morning. After pulling up our comfy crocheted blanket while I was on the couch watching the news, I fell back to sleep until 8:30.  I realized I couldn’t bum around all day so I put the blanket back and made my second cup of coffee for the day.  

I started a big pot of sauce for dinner tonight.  All I did was take two cans of crushed tomatoes, a small can of tomato paste, a cube of Dorot chopped basil, some dried oregano, and a splash of Merlot and mixed it together in my crockpot.  On the stovetop, I heated a little olive oil and cooked some garlic just until it started to brown and added it to the crockpot.  I had half of a pork loin to use so I trimmed the fat and added it to my crockpot as well.  Once the pork cooked through, I shredded it with a fork.  It’ll make a nice meat sauce to accompany pasta and homemade garlic bread.  Lately I’m all about using what’s in my kitchen and stretching ingredients while trying to keep meals as healthy as possible.

Not only has this week been good so far, but it’s allowed me to reflect on certain things I’m thanking for.  I’m thankful for my family and the life my husband and I have together.  I’m thankful for the food we’re able to put on our table and the warm roof over our heads.  I’m thankful for certain recognition I’ve gained in the past few days.  I’m thankful for new opportunities to work with some great people.  I am thankful for the warm feeling in my heart that 2013 is going to bring some great things if I work hard enough.  I am thankful for learning never to take the little things for granted as they truly are the biggest things in life – like a simple date to the store, or an evening walk, a family dinner, good friends, new friends and opened doors.
