Grilled Boneless Pork with Tomato Compote

Sometimes, without even trying, I manage to make quite an impressive meal.  The other evening I had six small pieces of boneless pork to grill.  Instead of just throwing them on the grill with some seasoning, I decided to get creative with some of the fresh herbs and vegetables I had on hand.
 

 
On a sheet of aluminum foil, I sprayed non-stick spray.  I spread each piece of pork on the foil.  I chopped up about half to a whole cup of grape tomatoes, added some chopped scallions from our garden, a chopped garlic clove, some fresh cilantro and mixed it all up with about half a tablespoon of olive oil.
 
I turned the grill on medium and placed the foil on top of it with the edges ever so slightly rolled up to form a packet.  I grilled the pork just until it was cooked (about 15 minutes).  I let it sit for a few minutes and served it with a salad.  It turned out to be a perfect little summertime meal!
 
I feel that cilantro haters might miss the full flavor of the compote, but the herb is optional and feel free to substitute the cilantro with another herb of choice.  I didn’t have lime on hand, but a squeeze of fresh lime in the compote might be quite tasty, too.  Essentially, it’s a salsa without the heat.  Serve this with a salad or grilled vegetables and most definitely have a margarita or glass of summer white wine in hand!
