Go meatless with a delicious Grilled Chik’n Caprese Sandwich made with MorningStar Chik’n patties, tomato, mozzarella, and basil!

Just upon entering college, I decided to become a vegetarian. I believe I made this decision based on an unappetizing encounter with a hamburger. It was a “That’s it! I’m done!” kind of moment that had me swearing off eating meat. At least for two years. I got quite the education during my time as a vegetarian on the food that we put into our bodies!
Since I was so used to eating meat, I learned how to be creative with my meals to continue getting the protein I needed. I became a big fan of MorningStar Farms. I’ve tried plenty of their products and was repeatedly shopping for their Grillers Original and Chik’n patties. Even though I’m back to a carnivorous diet, I still enjoy these convenient, veggie options. Especially during the Summer when I tend to eat lighter meals!
While I was at Target last week (surprise, surprise), I stopped in the freezer section to pick up my MorningStar Farms favorites. Because I have the Cartwheel app, I was able to save 20% on the MorningStar Farms products I bought. You can, too, until 7/4/15!
I grabbed a box of Chik’n patties and Grillers Original patties. Since Caprese Salad is one of my favorite Summer go-to dishes, I also purchased a tomato and ball of fresh mozzarella. With fresh basil growing in my backyard and the ingredients I purchased from Target, I decided that grilled Chik’n Caprese sandwiches would make an excellent lunch!
We love using our grill during the Summer to give our food that unique, smokey flavor. I fired up the grill one afternoon to make myself a grilled Chik’n Caprese sandwich. It was simple to put together and combined some of my favorite Summertime flavors!
- 1 MorningStar Farms Chik'n patty
- 1 fresh mozzarella slice
- 1 tomato slice
- Whole wheat bun
- Fresh basil
- Optional toppings: roasted red pepper, balsamic vinegar
- Prepare Chik'n patty in microwave according to package.
- Heat grill to medium heat.
- Place Chik'n patty on hot grill and brown patty on each side.
- Lower heat and add wheat bun to grill to toast.
- Assemble Chik'n sandwich and top with fresh mozzarella, tomato, and fresh basil. Add a slice of roasted red pepper and drizzle with balsamic vinegar, if desired.
The Chik’n Caprese sandwich was so good that I decided to try it again using the Grillers Original patties. These are even easier to throw on the grill because there’s no preheating required. Just heat your grill and cook these patties until they’re fully cooked. Then, assemble your Caprese sandwich and enjoy!
