Grilled Watermelon & Feta Salad

When it’s just too hot outside to crave anything heavy, whip up this refreshing Grilled Watermelon & Feta Salad in just minutes!

Have you ever grilled a watermelon?  I have, just recently, and it’s kind of awesome!  Since it’s grilling season, I’ve been experimenting with all kinds of different foods on the grill.  I remember reading a whole article in Rachael Ray’s magazine (I think it was last year) about the different foods you can grill.  Watermelon was one of them!  

You know when it’s just too damn hot outside to want to eat?  That’s how this salad recipe came about.  We’re in the middle of our first heatwave and it’s no bueno.  For me anyway!  But this salad is really good on a day like that!  I mean, there’s nothing better than biting into a juicy watermelon slice on a really hot day!

Summer’s about the simple things in life.  Right?  Running through sprinklers.  Putting your toes in the sand.  Getting your hands in the dirt.  Watermelon juice running down your face after biting into a slice.  That simplicity is also reflected in the lighter meals we eat this time of year.  

So I figured that I’d take the simple joy of eating watermelon on a hot summer day and turn it into a salad!  Watermelon isn’t just the quintessential summer fruit, but it’s super hydrating, too! When it’s pushing 100 degrees outside – and we’ve been there already – slice up a watermelon and enjoy it in this refreshing salad!

I also love the sweet and savory aspect of this salad.  You’ve got sweet, juicy watermelon dressed with fresh lime juice.  Then, we break out our inner  “Salt BAE” and sprinkle on a little sea salt and some crumbled feta cheese.  Toss on some fresh mint and a pinch of cayenne (totally optional, but so worth it) for an insanely delicious summer salad!


Grilled Watermelon & Feta Salad


  • 6 watermelon slices
  • 1-2 tbsp. extra virgin olive oil
  • 1 lime, halved
  • Sea salt, to taste
  • Crumbled goat cheese
  • 1 tbsp. fresh mint, chopped
  • Optional: cayenne pepper


  1. Preheat grill to medium-high heat.
  2. Lightly brush the watermelon slices with olive oil.
  3. Once the grill is hot, place the watermelon on the grill.
  4. Cook 2-3 minutes. Flip and cook for another 2-3 minutes.
  5. Remove from grill and allow to cool.
  6. Cut watermelon into cubes and divide evenly between two bowls.
  7. Squeeze half of a lime onto each bowl and season with a little sea salt and cayenne pepper, if desired.
  8. Sprinkle crumbled goat cheese on top of each bowl and finish with fresh mint.
  9. Serve immediately or chill before serving.

This salad is best when eaten immediately after making it.  Then again, when you’re hot and hungry, you probably won’t have a problem with that!  If you’re still too hot to even eat this salad, you might want to try making a Watermelon & Mint Slushie instead!
