Staying Healthy with HelloFresh

Currently, I wouldn’t say that I’m actually struggling with my weight, although I’ve been struggling with my weight all of my life. However, I recently lost five pounds and it has made such a difference in the way I feel emotionally and physically.  The one biggest change I’ve made is increasing the amount of vegetables I eat with every meal and that seems to have made all the difference.  Now that our garden has completely taken off, we can’t seem to keep up with all of the fruit and vegetables that are growing!  A lot of it is shared with friends and family.  A lot is incorporated into our meals. 

Despite all of the fresh veggies we now have to use, I get bored easily with my weekly menu.  I mean, how many versions of grilled pork chops and chicken can you actually make before you feel like you’ve tried them all? Enter, HelloFresh. HelloFresh has made it so easy and convenient to not only try new meals on a weekly basis, but eat healthy, well-balanced meals, too.  I recently got to try three of their meals and both my husband and myself were absolutely blown away!

The boxes are available in three varieties: classic, veggie, and family.  The classic box has a little of everything. The veggie box is filled with great vegetarian options.  The family box includes some of the same delicious meals as the classic box with kid-friendly options.  We chose the classic box.

The meals were delivered to me on a Monday evening in a well-packed box.  The distribution center for my area is only eight minutes away from my house, so I had no worries about freshness! Each meal is individually packed in its own box with meats packed separately on top of layers of large ice packs.  We ordered meals for two, so all of the ingredients were already portioned out for us.  The only ingredients we needed out of our own kitchen were olive oil, salt, and pepper.  All we had to do was prep and cook!

The first meal we tried was the Seared Steak and Creamy Chipotle Pan Sauce with Poblano, Corn, and Crispy Potato Hash.  This meal included a nice cut of sirloin steak, corn on the cob, poblano pepper, russet potatoes, onion, chipotles in adobo sauce, beef stock concentrate, and sour cream.  The step-by-step preparation was easy to follow and the meal was delicious!  Here’s what we thought:

Him: It was really good.  The steak melted in your mouth.

Me: I also thought this meal was really good.  There were a tad too many onions in it for my liking.  I would cut back next time.  I couldn’t believe how sweet the corn in the hash was.  Awesome!

The next meal I prepared was the Jerk Chicken and Peach Skewers with Curried Rice Pilaf.  This meal included cleaned and trimmed chicken breasts, a peach, red onion, sugar snap peas, wooden skewers, basmati rice, curry powder, chicken stock concentrate, jerk seasoning, and a lemon.  Instead of using the broiler, I made these skewers on the grill.  We’re not a fan of curry (plus I knew the jerk seasoning would give this dish enough flavor), so I only used about a pinch of the curry powder in the rice pilaf.

Him: Again, really good.  Loved the grilled peaches with the chicken.  It was a genius combination.

Me: I absolutely loved the jerk seasoning.  It wasn’t too hot, but gave the dish just enough kick.  I also really enjoyed the grilled peaches.

Since my husband was off of work for the week, we had our last HelloFresh meal – Heirloom Tomato Flatbread with Prosciutto and Pesto – for lunch. This meal included pizza dough, proscuitto, fresh mozzarella, and prepared pesto.  I called in my husband to help me prepare this dish since he’s the pizza master in this house.  He took over stretching the dough for me since it was a bit harder to work with than the pizza dough we usually buy.  

I took over adding the toppings to the flatbread, so it was a team effort.  We had stretched the dough over a lightly floured surface.  It became a little dry after that.  In addition to lightly oiling a baking sheet, I brushed the dough with olive oil.  That worked like a charm!  

Him: The flatbread was good.  It was crunchy and the pesto had a great flavor.

Me: The flatbread had a really nice crunch.  I can’t wait to remake this flatbread with cherry tomatoes from our garden!
