Holiday Baked Brie with Olives and Sun-Dried Tomatoes

Holiday entertaining is upon us.  Although we’re still keeping our gatherings small this year, that doesn’t mean we will be skimping on the yummy appetizers before our holiday meals.  I could honestly eat appetizers as a main meal and be happy.  In fact, my husband and I usually have a big spread of appetizers as our dinner on Christmas Eve and New Year’s Eve.

When it comes to my favorite appetizers, the cheesier the better!  While I love a good cheese board, dipping into some gooey, melty cheese is just so good!  So I’m changing things up this holiday season.  Instead of serving a cheese board, I’ll be working on my baked brie game and serving it with entertaining crisps from 34 Degrees.

34 Degrees launched two new flavors of their entertaining crisps – Seeded and Chili Flake & Olive Oil – that are delicious with charcuterie or a melted wheel of brie.  These crisps are light and crunchy.  The Seeded Crisps are made with flax, red quinoa, and sesame.  And the Chili Flake & Olive Oil have just the right amount of spice.

Both of these flavors work so well with this Holiday Baked Brie recipe!  This baked brie is topped with a mix of Greek olives and sun-dried tomatoes arranged to look like a holiday wreath.  As an added touch, I’ve cut a bow out of a sun-dried red pepper.

This Holiday Baked Brie recipe is perfect for Christmas entertaining.  The olive and sun-dried tomato “wreath” adds an extra special touch and savory and delicious flavor.  This appetizer looks impressive, but is ready in under 30 minutes with little prep work!

The first thing we need to do is melt our brie.  Preheat the oven to 350 degrees, unwrap the wheel of brie, and set it into a small baking dish (you want it to be just slightly larger than the brie) or on a baking sheet lined with parchment paper.  Bake the brie for 15-20 minutes, or until it’s melted in the middle.

While the brie is baking, chop up the olives and sun-dried tomatoes.  I used a mix of Greek olives like Kalamata and Amfissa olives.  Mix the olives and tomatoes in a small bowl and set aside.

Once the brie is finished baking, remove it from the oven.  Arrange the olives and tomato mixture around the edge of the brie to form a “wreath.”  If desired, cut a bow shape out of a sun-dried pepper or tomato and place it onto the “wreath.”

Serve this holiday baked brie immediately with a knife to cut through the rind and 34 Degrees crisps for dipping or spreading.

Holiday Baked Brie with Olives and Sun-Dried Tomatoes

Ingredients

  • 8 oz. brie wheel
  • 1/4 cup pitted mixed olives, chopped
  • 1/4 cup sun-dried tomatoes, chopped
  • Optional: 1 sun-dried pepper, or 1 sun-dried tomato

Instructions

  1. Preheat oven to 350 degrees.
  2. Unwrap the brie and place it in a small baking dish, just slightly larger than the brie, or onto a parchment paper lined baking sheet.
  3. Bake for 15 minutes, or until the middle of the cheese is melted through. The center of the cheese should feel soft to the touch.
  4. While the brie is baking, prepare the olives and sun-dried tomatoes and mix in a small bowl. Set aside.
  5. Remove the cheese from the oven and arrange the olive and tomato mixture around the edge of the brie like a wreath.
  6. If desired, cut a piece of sun-dried pepper or sun-dried tomato into the shape of the bow and place onto the "wreath."
  7. Serve brie immediately with a knife to cut through the rind and 34 Degrees crisps or snaps for dipping or spreading.
