Can you even believe that 2022 is coming to an end? I’m still processing 2020 and here we are heading into 2023! With the new year ahead, I wanted to read up on some New Year’s Eve traditions from around the world. I came across several articles featuring different foods that will apparently bring you luck if eaten on New Year’s Eve.
One of the foods that stood out for me was pomegranates. Of course, you’ve probably seen them available all holiday season. That’s because they’re currently in season! Their ruby red color looks gorgeous when added to holiday recipes. But did you know that pomegranates also represent fertility, life, and abundance on New Year’s Eve?
New Year’s Eve is a big snacking day for us! We even abandon a full dinner for a spread of appetizers instead. So I wanted to make a new recipe for us to enjoy on New Year’s Eve with a bit of tradition tied into it. I decided to make a whipped feta dip with honey, pistachios, and pomegranate. Honey, pistachios, and pomegranate are all lucky foods!
Honey Whipped Feta Dip with Pistachio and Pomegranate
Not only is this whipped feta dip really, really good, it’s super easy to make, as well! And it might even bring you some good luck for the new year, too! Just blend the cheeses, olive oil, and pepper together. Then, top with honey, pistachios, and pomegranate. Serve this creamy and delicious dip with your favorite crackers!
The first step in making this dip is whipping up the dip itself. Add the feta, cream cheese, olive oil, and pepper to a blender or food processor. Blend until smooth and creamy. Then, spoon it into a bowl and smooth it out, leaving a well in the center.
Now, we’re going to pour the honey into the center of the dip. The honey is a symbol of good fortune. It’s also represents hope for a sweet year ahead.
Then, add the toppings. Sprinkle some chopped pistachios on top of the dip for health and happiness. Finish with the pomegranate seeds.
Serve the whipped feta dip with your favorite crackers!
- 8 oz. feta cheese
- 1/2 cup cream cheese, softened
- 1-2 tbsp. olive oil
- Black pepper, to taste
