Loaded Southwestern Sweet Potato Fries

French fries will always be one of my favorite foods. Since I’ve switched my eating habits, I haven’t been able to enjoy them as much.  A few weeks ago, I found a way to eat them, loaded style, without the guilt!  I used a sweet potato.  I have been buying white sweet potatoes like crazy!  My husband makes them on the grill and they come out delicious!  White sweet potatoes kind of fool my mind into thinking I’m having a regular baking potato.

These Loaded Southwestern Sweet Potato Fries were invented during a Friday night craving for fries.  I didn’t want to ditch my diet.  So I cut up a small sweet potato into sticks, baked them, and topped them with avocado, tomato, shallots, lime juice, and a splash of hot sauce.  So delicious!
