While I love a good cup of coffee, I have become quite a big tea drinker. Green tea has always been a favorite of mine. Not only is it full of health benefits, I love its light earthy flavor. Even though I have had many cups of green tea – especially with honey and lemon – I hadn’t tried matcha until recently.

Matcha is green tea in powder form.  It’s easy to make, too.  Just take a teaspoon of powder and stir into a hot cup of water until it’s dissolved and frothy.  It’s wonderful in a latte or served iced.  Matcha is also great to use in baking.  It lends a subtle hint of green tea flavor in your baked goods.

I’ve found plenty of cookie and cupcake recipes using matcha as a main ingredient.  Considering it’s Christmas cookie season, I decided to try making cookies with this smooth tasting green tea.  Not only does the matcha give these cookies a festive green color, but the cranberries add an extra dose of Christmas color!

Matcha Cranberry Almond Cookies

These Matcha Cranberry Almond Cookies are sweet and crunchy with a hint of green tea flavor. Plus, their festive red and green color will make them a great addition to your holiday cookie trays!

The first step in making these cookies is sifting the dry ingredients into a bowl.  Sift the flour, baking soda, matcha, and salt together.  Then, whisk it all together just until the ingredients are combined.

In a mixing bowl, cream the butter and sugar together until it’s light and fluffy.  Then, you can add in the egg and continue mixing until it’s incorporated.

Now, we’re going to gradually add the dry ingredients into the wet mixture and mix it up just until a soft dough begins to form. Then, fold in the almonds and dried cranberries.

Spoon the cookie dough onto parchment paper lined baking sheets and bake in a 350 degree oven for about 10-12 minutes.  The cookies will be finished when they’re set in the center and golden brown on the bottom.

Cool the cookies on wire racks. Store them in cookie tins, add them to cookie trays, and don’t forget to sneak a few for yourself!

Ingredients

  • 1 cup + 2 tbsp. flour
  • 1/2 tsp. baking soda
  • 2 tsp. matcha green tea
  • 1/8 tsp. salt
  • 1/2 cup butter, softened
  • 3/4 cup granulated sugar
  • 1 egg
  • 1/3 cup slivered almonds
  • 1/3 cup dried cranberries

Instructions

  1. Preheat oven to 350 degrees and line two baking sheets with parchment paper.
  2. Sift the flour, baking soda, matcha, and salt into a medium bowl. Whisk to incorporate the dry ingredients.
  3. In the bowl of a mixer, cream the butter and sugar together until it's light and fluffy.
  4. Then, add the egg and mix just until combined.
  5. Gradually add the dry ingredients into the wet ingredients and mix just until a soft dough forms.
  6. Then, fold in the almonds and dried cranberries.
  7. Spoon the cookie dough onto the prepared baking sheets in tablespoonfuls.
  8. Bake the cookies for 10-12 mins, or until set in the center and golden brown on the bottom.
  9. Allow the cookies to cool on wire racks before serving.
