Mojo Marinated Shrimp Skewers

This weekend is Memorial Day weekend – the unofficial start to summer – and if you haven’t already done so, it’s time to fire up the grill! Ever since the weather’s warmed up, we’ve been making great use of our grill again.  One thing we haven’t grilled yet is skewers.  Sure, I love a juicy burger or a hot dog that snaps when you bite into it.  But skewers are so much fun to make and eat!

First, you can basically add any kind of protein you want to a skewer.  Or none at all!  I do love grill charred veggies!  But one of my favorite things to skewer and grill is shrimp!  Last week, I made tasty Mojo Marinated Shrimp Skewers that were so simple, but held a lot of flavor in each bite.  The mojo marinade I used gave the skewer a citrusy flavor with a tiny kick of heat.  Perfect for summer grilling!

If you’re looking to grill something other than burgers and hot dogs this weekend, you might want to make these shrimp skewers!  They’re easy to prepare ahead of time and a perfect excuse to dive into those seasonal summer veggies and succulent shrimp.  Plus, these skewers take minutes to cook on the grill!

Mojo Marinated Shrimp Skewers

What is mojo marinade?  It’s a sauce made with citrus, garlic, olive oil, fresh herbs, spices, and a splash of heat from sliced jalapeños.  This marinade is usually used for roast pork (like this Cilantro-Lime Slow Cooker Pork Roast I made).  But it’s just as delicious when used for chicken, fish, shrimp, or veggies!

The first thing we’re going to do is prepare the mojo marinade.  It’s really simple.  Just mix minced garlic, fresh lime juice, fresh lemon juice, fresh orange juice, olive oil, fresh oregano, cumin, and jalapeño slices in a bowl.  Then, stir in salt and pepper and set aside.

Now, take your shrimp and chopped veggies and start skewering them together.  Thread a shrimp onto a skewer.  Then, follow with a piece of summer squash, a grape tomato, pepper, and onion.  Repeat until the skewer is full.

Place the prepared skewers into a large dish, like a lasagna pan, and pour the marinade over the skewers.  Toss the skewers to coat, cover the pan and marinate for at least 30 minutes.  Of course, the longer you marinate the skewers, the more flavor you’ll infuse!

Once the skewers are done marinating, heat the grill to medium heat.  Then, grill the skewers for about 4 minutes on each side or until the shrimp are completely cooked through.  You should have a slight char on your veggies as well.

Then, you can take the skewers off the heat and serve! They’re really good with a fresh green salad or served with rice. It’s a nice, healthy grilled meal!

Mojo Marinated Shrimp Skewers


    For the mojo marinade:
  • 6 cloves of garlic, minced or grated
  • 1 lime, juiced
  • 1 lemon, juiced
  • 1 large orange, juiced
  • 1/4 cup olive oil
  • 1/2 tsp. fresh oregano, chopped
  • 1/4 tsp. ground cumin
  • 1 jalapeño, sliced
  • Salt and pepper, to taste
  • For the shrimp skewers:
  • 1 pound, or 20 large peeled and deveined shrimp
  • 1 small yellow squash, cut into 1 inch slices
  • 12 grape tomatoes
  • 1 red bell pepper, cut into chunks
  • 1 small red onion, cut into chunks
  • Metal or bamboo skewers


    For the marinade:
  1. In a bowl, mix all of the marinade ingredients together. Season with salt and pepper and stir until the salt has dissolved.
  2. For the shrimp skewers:
  3. Thread a shrimp onto the skewer. Follow with a piece of squash, a grape tomato, bell pepper, and onion. Repeat the process until the skewer is full.
  4. Once the skewers are finished, place them in a 9x13 dish and pour the marinade over the skewers. Toss the skewers to coat, cover the dish, and marinate for at least a half hour.
  5. When the shrimp is marinated, light the grill on medium heat. Arrange skewers horizontally on the grill. 
  6. Cook the skewers for approximately 4 minutes on each side, or until the shrimp is pink and cooked through and the vegetables are slightly charred.
  7. Serve immediately with a side salad or rice.

Because you’re infusing the marinade with jalapeño flavor, you don’t get as much heat as actually eating it. You can omit it altogether if you’re not a fan of jalapeño. But all of the flavors work so nicely together with the citrus forward marinade, shrimp, veggies, and flavor from the grill.
