No-Bake Mini Chocolate Pumpkin Pies

The stretch of holidays between Halloween to New Year’s Eve always makes me really happy.  I love everything about holiday celebrations from the decorations, the festivities, and of course, the food. There’s always one dessert that comes to mind when I think of our family gatherings.  One of my mom’s signature desserts is her ice box cake made with layers of graham crackers, chocolate pudding, and topped with whipped topping and chocolate sprinkles.  

I have never been much of a cake fan, but I am all about pie!  I love a good apple pie warmed up with a scoop of ice cream on top.  My husband loves the chocolate pecan pie I make for him.  But one of my absolute favorites is pumpkin pie with a dollop of whipped cream on top!  With the holidays coming up and the return of pumpkin season, I decided to experiment a little.  What if I took my mom’s ice box cake and turned it into festive mini pies?

No-Bake Mini Chocolate Pumpkin Pies

This recipe definitely reminded me of my mom’s ice box cake.  The chocolaty base flavor of these mini pies is surprisingly on par with the spices that the Dannon® Oikos® Pumpkin Pie Greek Yogurt® contributes to this delightful little dessert. These individually sized pies are a perfect snack for satisfying cravings for seasonal sweets!  They’re also great when you’re in a jam and need to whip up a dessert quick! And clean up is a breeze!

No-Bake Mini Chocolate Pumpkin Pies

Ingredients

  • 1 pkg. chocolate pudding
  • 1 pkg. mini graham cracker pie crusts
  • 2 containers of Dannon® Oikos® Pumpkin Pie Greek Yogurt®
  • Reddi-wip® original
  • Chocolate sprinkles

Instructions

  1. Prepare chocolate pudding as directed on package.
  2. Once pudding is set, spoon pudding into each mini pie crust.
  3. Next, add a layer of yogurt. Chill pies in the fridge for 10 minutes or up until serving.
  4. Top mini pies with a dollop of Reddi-wip® and some chocolate sprinkles.
  5. Serve cold.
