Tonight I was all set to tackle my fear–the outdoor grill. With brush and grill spatula in hand, I headed to the big steel monster. It was too windy outside so I took out the cast iron skillet and grilled up some chicken I had marinating all day. I basically just threw some ingredients into a bowl and hoped it would work as a marinade. It worked!
Not Bad for Throwing Stuff in a Bowl Marinade

- 1 cup orange juice
- juice of one small lemon
- 3 cloves garlic, mashed into paste
- small handful of fresh basil, chopped
- salt and pepper to season
Mix together and marinate chicken. It’s just the right amount of citrus and garlic flavor. It makes the chicken super moist. So good for summer!
