We had my parents over for dinner tonight. We had a light dinner of grilled chicken, salad and roasted potatoes. I wanted to make a dessert that wasn’t rich and heavy so I made a simple rustic apple tart. This recipe uses refrigerated pie crust for easy preparation. The tart has the same taste of apple pie, but is much lighter.
Rustic Apple Tart
– 1 refrigerated pie crust
– 3 medium Granny Smith apples, peeled and thinly sliced
– 1 egg white, beaten
– 3/4 cup sugar
– 2 tbsp. cornstarch
– 2 tsp. ground cinnamon
Preheat oven to 425º. Place dough on a tart pan or pizza pan. Brush crust with half of the egg white. In a medium bowl, mix apples, sugar, cornstarch and cinnamon. Spoon mixture into the center of the pie crust leaving 2 inches of edge. Carefully fold crust over apples. Brush with remaining egg white and sprinkle with a little sugar. Bake for 25 minutes or until crust is golden brown. Serve warm.
