Holiday baking season is upon us and, for some, it may have already started.  As for me, I haven’t been as into it as I used to be.  The past couple of years, I haven’t baked as much as I used to during the holiday season.  I used to love turning up the Christmas tunes and spending my December evenings baking away in the kitchen. Lately, my schedule’s gotten a lot busier and I haven’t had much time to do any leisure baking!  So I’m taking any chance I get to preheat the oven and bake up something sweet this holiday season to reignite my love for baking!

My husband had a three day weekend this past weekend.  We usually have pizza night on Friday, but this Friday night I made homemade calzones instead.  I picked up a DIGIORNO® RISING CRUST® Supreme Pizza at Dollar General to have for an easy lunch over the weekend.  As an added bonus, I also bought NESTLÉ® TOLL HOUSE® Morsels and got into the baking spirit.  I made an easy skillet chocolate chip cookie to have as dessert.  My husband is a huge fan of chocolate chip cookies, so I knew he’d love it!  As someone who isn’t always the biggest fan of sweets, I didn’t realize that I’d absolutely love it, too!

The skillet cookie and the pizza took exactly the same time to bake (just 25 minutes until both were hot and ready to eat!).  I baked the cookie first and while it cooled, I popped our pizza in the oven.  By the time we were done eating, the skillet cookie was cool enough to cut into!  This dinner and dessert combo is perfect for the busy holiday season. Whether you’re looking for some stress-free holiday baking or an easy meal for your overnight guests, this pizza and cookie combo has definitely got you covered!

I’ve made batch upon batch of chocolate chip cookies before for my husband.  This recipe might be my new favorite since it makes one big, delicious, soft chocolate chip cookie!  I added a couple ingredients into an average chocolate chip cookie recipe and brought it to a whole new level of tastiness! Have you ever added cinnamon to your chocolate chip cookies before? If you haven’t, you will now. I promise you!  And if you add nuts to your cookies, consider using pecans instead of walnuts.  So much yum!

Ingredients

  • Vegetable shortening, for greasing
  • 8 tbsp. unsalted butter, softened
  • ½ cup granulated sugar
  • ½ cup packed light brown sugar
  • 1 large egg
  • 2 tsp. vanilla extract
  • 1 ¼ cups all-purpose flour
  • ½ tsp. baking soda
  • ½ tsp. salt
  • 1 tsp. ground cinnamon
  • ½ cup semi-sweet NESTLÉ® TOLL HOUSE® Morsels
  • ¼ cup pecans, chopped

Instructions

  1. Preheat oven to 350º. Grease a cast iron skillet with vegetable shortening.
  2. In a large bowl, add softened butter and sugars. Beat until fluffy.
  3. Add egg and vanilla to the sugar mixture and beat until combined.
  4. In a medium bowl, add flour, baking soda, salt, and cinnamon.
  5. Gradually beat in dry ingredients to wet ingredients.
  6. Fold in chocolate chips and chopped pecans.
  7. Press cookie dough into the bottom of the prepared cast iron skillet.
  8. Bake for 25 minutes or until edges of the cookie are golden brown and a toothpick comes out clean from the center.
  9. Allow cookie to cool before serving.
