It’s been way too hot here in Jersey this summer to even think about making anything too heavy or anything that would require turning on the oven. So instead, we’ve been grilling and making quick dinners that don’t require a ton of effort. I’ve been thankful for easy freezer items that I could just heat up quickly and serve.
Like meatballs! Whether they’re homemade or from the freezer aisle, meatballs can easily be reheated and served beyond just spaghetti and sauce! For instance, I love teriyaki flavors. So I decided to make quick teriyaki meatball kebabs made with bell peppers from the garden for crunch and pineapple chunks for sweetness.
These sweet and tangy teriyaki meatball kebabs don’t require a ton of prep work or cooking. Just heat the meatballs according to package, toss with teriyaki sauce, chop the peppers and pineapple, skewer, and dip for a fun summertime meal!
Quick Teriyaki Meatball Kebabs
With Labor Day Weekend coming up, these meatball kebabs would make a great appetizer or snack to serve. If you want to make a complete meal out of these skewers, serve them over rice with extra teriyaki sauce, sesame seeds, and chopped fresh cilantro.
The first thing we’re going to do is add the meatballs to a microwave-safe dish. Microwave the meatballs according to the package.
While they’re still warm, toss the meatballs with teriyaki sauce.
Now, we can start assembling the kebabs. Add a meatball, a pineapple chunk, and a bell pepper to the skewer. Repeat until the skewer’s full.
Once the kebabs are finished being put together, serve immediately while the meatballs are still warm. If desired, sprinkle them with sesame seeds and cilantro. Serve with rice on the side and extra teriyaki sauce for dipping.
- 1 - 14 oz. bag frozen meatballs
- 1/2 cup bottle teriyaki sauce
- 1 1/2 cups pineapple chunks
- 2 large green bell peppers, cut into chunks
- Optional: sesame seeds, chopped fresh cilantro, rice
- Add the meatballs to a microwave-safe dish and heat according to package.
- While the meatballs are still warm, toss with the teriyaki sauce.
- Begin assembling the skewers. Add one meatball, one pineapple chunk, and one bell pepper chunk. Repeat until the skewer is full.
- Heat teriyaki sauce in a small bowl for dipping. Then, serve the kebabs warm with sesame seeds, fresh cilantro, and rice on the side, if desired.
Keep a bag of frozen meatballs on hand for busy nights or evenings when it’s too hot to cook and you’ll still be able to make a delicious meal for the fam! Use your favorite bottled or homemade teriyaki sauce to toss the meatballs in (plus, for dipping) and you’ll have an easy dish that can be made in minutes!
