Last year, I bought myself a waffle maker after seeing so many great “waffled” recipes. Sadly, I think I’ve only used my waffle maker twice. So it was about time that I broke out my new, practically new appliance again to make a waffle recipe that’s perfect for summer and the 4th of July!
We love berry season around here. So much that we have huge blackberry and raspberry bushes in the backyard. We’ve started to get raspberries off of our bush and the blackberries are just starting to turn. With so many berries growing in the backyard each summer, I try to get creative beyond jam-making!
Even though I’m way more of a savory breakfast lover, I’ll eat a sweet breakfast as long as it has fresh berries in it. I love blueberry pancakes and blueberry muffins, so I decided to make some blueberry waffles. Homemade waffles are delicious! There’s no going back after making a homemade waffle! They’re light, fluffy, and not too sweet. It seriously makes me wonder why I haven’t used my waffle maker more often.
So today I’m sharing a simple blueberry waffle recipe that’s perfectly patriotic when topped with a dollop of whipped cream and a mix of fresh raspberries and blackberries. And if you want to get real fancy, make extra waffles! Have your waffles again for dessert – toasted and topped with vanilla bean ice cream! Ice cream and waffle nights are the best!
Ingredients
- 1 cup all-purpose flour
- 1/2 tsp. salt
- 1 tbsp. baking powder
- 1 1/2 tbsp. sugar
- 1 egg, slightly beaten
- 1 cup milk
- 2 tbsp. butter, melted
- 1/2 tsp. pure vanilla extract
- 1 1/2 cups fresh blueberries
- Whipped cream, raspberries, and blackberries, for topping
Instructions
- Grease a waffle maker with non-stick cooking spray and preheat to a medium temperature.
- In a mixer, beat flour, salt, baking powder, sugar, egg, milk, butter, and vanilla together just until well combined.
- Fold in blueberries.
- Spoon batter into the preheated waffle maker.
- Cook waffles until they turn golden brown and are cooked through, about 4-5 minutes.
- Serve with whipped cream and fresh raspberries and blackberries.


Even though this recipe makes a small batch of waffles (because I’m not sharing), it can easily be doubled. So if you’re planning a family outing to go berry picking, keep this recipe in mind when you bring home your baskets of berries! These waffles make a perfect summer breakfast (or dessert when topped with ice cream) that the whole family will enjoy!
