Rocky Road ice cream lovers will love this Rocky Road Fudge! It’s made with a simple chocolate fudge base, plus crushed walnuts and marshmallows!

Christmas sweets aren’t just about cookies. There’s candy making to be done, too. Since I’ve been doing cookie exchanges with friends and family, I’ve been making fudge. I started with a simple walnut fudge and have since added Rocky Road Fudge to my cookie trays. It’s so easy to make and all it takes is a short list of ingredients to make it!
This Rocky Road fudge starts with a chocolaty base of semi-sweet chocolate chips and a container of chocolate frosting. Yes! Frosting! The chocolate chips are melted over low heat. Then, the frosting is mixed in. Add a splash of milk and a little vanilla. Then, fold in crushed walnuts and marshmallows.
Once everything is mixed, all you have to do is spread the fudge in a pan and let it set in the fridge for a few hours. Done! Then, you can flip the fudge out of the pan, cut it into squares, and serve it on your cookie trays (or pop a few pieces into your mouth – don’t worry! I won’t tell)!
- 12 oz. bag semi-sweet chocolate chips
- 1 container milk chocolate frosting
- Splash of milk
- 1 tsp. vanilla extract
- 1 cup mini marshmallows
- 1 cup chopped walnuts
- Spray an 8" x 8" inch pan with non-stick cooking spray.
- In a medium pot, continuously stir the semi-sweet chocolate chips on low until chocolate is melted. Remove from heat and add the container of chocolate frosting. Stir until combined.
- Add a splash of milk to the mixture so it stirs easier. Then, add the vanilla.
- Fold in the marshmallows and walnuts.
- Then, pour the mixture into the prepared pan and chill in fridge for 3 hours or until hardened.
- Once the fudge has set, flip pan over on a cutting board and cut the fudge into squares.
- Store fudge in a plastic wrapped lined container in the fridge up to two weeks.

Rocky Road lovers are going to love this fudge! One of my husband’s favorite ice cream flavors is Rocky Road. I’m going to need to put a lock on my fudge container so he doesn’t eat it all before Christmas! Thankfully, I’ve set up a distraction in the form of a small cookie tin for him to enjoy!
I couldn’t help but sneak a couple pieces as I was cutting this fudge into squares. It’s melt-in-your-mouth delicious! If you’re not serving this fudge right away, store it in a sealed container in the fridge.
