If you could receive any sweet indulgence for Valentine’s Day, what would it be? A heart-shaped box of gourmet chocolates or a dozen homemade Italian pastries? How about a big slice of decadent chocolate layer cake? Okay. Now I’m hungry!
For me, it would definitely be chocolate-covered strawberries. There’s nothing better than big, juicy strawberries covered in sweet milk chocolate. Chocolate and strawberries are a match made in dessert heaven! That’s why they’re one of my favorite treats to share on Valentine’s Day!
Every Valentine’s Day for the past few years, I’ve bought two frosted brownies (another favorite of mine) or mini cheesecakes for my husband and I to enjoy for dessert. I always get two chocolate-covered strawberries for us, as well. Since my husband knows how much I love them, I usually get to have both! Now, that’s love, baby!
Last week, FruitBouquets.com surprised us with a box of their Valentine Wishes™ Dipped Strawberries. There are a dozen strawberries in this box. Half are covered in milk chocolate and drizzled with red and white chocolate. The other half are dipped pink with adorable red hearts. They were a fun, early Valentine’s Day treat for my husband and I to share (or at least fight over who got to eat more)!
We couldn’t wait to dive into this box, but before we did I decided to make a dip for our strawberries. Remember those Italian pastries I mentioned before? Cannolis are usually a staple in any good box of pastries. But I’m a bad Italian. I’m not a big fan of the whole cannoli. I ditch the shell and just eat the filling.
So I took cannoli filling, made it skinny, and added strawberries to it to satisfy my chocolate and strawberry obsession. This dip isn’t as thick as other cannoli dips, but it’s still just as good! The strawberries aren’t overpowering and you still get all of the traditional flavor of cannoli filling without the guilt!
- Generous cup of strawberries, diced
- 1 tsp. honey
- 15 oz. container fat free ricotta cheese
- 3/4 cup plain Greek yogurt
- 1 tsp. vanilla extract
- 1 tsp. natural sweetener
- 1/3 cup mini chocolate chips
- Add the diced strawberries and honey to a small pot and heat over low.
- Stir continuously until the strawberries have become soft and easy to mash.
- Use a fork or potato masher to mash the strawberries into a strawberry sauce. Set aside to cool.
- In the meantime, add ricotta, yogurt, vanilla, and sweetener to a mixing bowl. Mix on medium speed until the ingredients are incorporated.
- When the strawberry sauce is cool, stir it into the ricotta mixture.
- Then, add the mini chocolate chocolate chips.
- Chill before serving with strawberries.
I’m not going to lie – this dip is so good that I may or may not have eaten some of it with a spoon (just like I eat the filling out of a cannoli). I mean, chocolate-covered strawberries are pretty darn good on their own. But if you want to take them to an extra special level, sweeten the deal with this dip! It’s got a slight hint of pink color to it, too, making it a perfect Valentine’s Day dip!
