It felt like springtime over the weekend here in New Jersey. We spent most of it outside without the bulk of heavy coats weighing us down. It definitely gave me a major case of Spring Fever! But the weekend before that, you’d think we were transported to the arctic! We had harsh, freezing temperatures that made it the perfect weather for soup and lots and lots of blankets.
In case those cold temperatures decide to creep back in (which it looks like they’re doing in a slightly less dramatic fashion), I’m sharing a delicious Slow Cooker Chicken Tortilla Soup recipe on Hello Nature today. This soup was also made in celebration of National Tortilla Chip Day, which happens to be today. As far as foodie holidays are concerned, I’m all about this one! Chips and salsa and a nice pile of loaded nachos are some of my favorite snacks of choice!
This soup is thick like chili, so it’s the perfect soup for dipping crunchy tortilla chips into! The best part about it is that you can let it sit in the slow cooker all day, then warm yourself up with a big bowl for dinner! Top it with avocado, sour cream, cheese, and green onions – and don’t forget to serve it with a side of tortilla chips!
