Slow Cooker Pineapple Teriyaki Pork Tenderloin

The weather has been all over the place lately here in Jersey.  We’ve gone from 90 degrees to temperatures in the 60’s in a matter of days.  While those 90 degree days were actually pretty pleasant (thank you, low humidity), they have served as a reminder that summer is well on its way!

We’ve been using the grill as much as possible to avoid heating up the house. But I’m still doing a bit of cooking inside making skillet meals and using the slow cooker. I can always rely on our slow cooker during the summer months!

One of my favorite things to make in the slow cooker is pork tenderloin.  While most people might use a pork roast to make pulled pork, I like to use pork tenderloin.  Even though it’s a leaner cut of pork, it still falls apart and stays juicy after slow cooking.

I was recently inspired by an old Instagram recipe of mine for Hawaiian Pulled Pork.  This recipe is made in the slow cooker with BBQ sauce and pineapple chunks. Perfect summertime flavors! But instead of using BBQ sauce, I wanted to make a teriyaki version using a Hatfield Honey Garlic Teriyaki Pork Tenderloin.

Slow Cooker Pineapple Teriyaki Pork Tenderloin

This is an easy slow cooker dump recipe.  After searing the pork tenderloin to seal up all of those juices, it’s placed in the slow cooker with a quick homemade teriyaki sauce and fresh pineapple chunks.  The result is a tender teriyaki style pork with a touch of summer sweetness from the pineapple.

The first thing I like to do before slow cooking is sear my pork tenderloin.  Even though the pork will eventually get shredded up, it’s still nice to have all of those juices locked in while it’s cooking.  Plus, you get those nice, crispy bits on it that add a little extra flavor.

Once the pork is seared, you can place it in the slow cooker.  Then, we’re going to whip up a quick teriyaki sauce. Mix chicken broth, soy sauce, brown sugar, ginger, and garlic together.  Pour the sauce over the pork loin.

Now, add the pineapple chunks and onion around the pork loin.  If you want, as you’re cutting the fresh pineapple into chunks, you could hollow out half to use as a bowl to serve the pork in later. Just wrap the pineapple half and refrigerate until it’s time to serve the pork.

Cover the slow cooker and cook the pork on low for 8 hours.  Once the pork is cooked, you’ll be able to shred it easily.  Then, give everything a stir to incorporate the pineapple and onion.

If you saved the pineapple half, you can scoop up the pork mixture and fill the pineapple with it.  Or serve the pork with a side of rice or stir-fried veggies.

Slow Cooker Pineapple Teriyaki Pork Tenderloin

Ingredients

  • 1 tbsp. olive oil
  • 1 Hatfield Honey Garlic Teriyaki Pork Tenderloin
  • 1/2 cup chicken or vegetable broth
  • 1/4 cup soy sauce
  • 4 tbsp. brown sugar
  • 1/4 tsp. ground ginger
  • 1 clove garlic, grated or minced
  • 1 tbsp. cornstarch
  • 2 tbsp. water
  • 1/2 cup red onion, chopped
  • 3 cups pineapple chunks, fresh or canned (juice drained)
  • Salt and pepper, to taste
  • Optional: sesame seeds, chopped green onions, to garnish

Instructions

  1. Heat olive oil in a skillet over medium heat. Add the pork tenderloin and sear on all sides, and place in the slow cooker.
  2. In a small mixing bowl, mix the chicken broth, soy sauce, brown sugar, ginger, and garlic together to make a teriyaki sauce. Pour sauce over pork loin.
  3. Make a cornstarch slurry by mixing the cornstarch and water together. Stir it into the sauce.
  4. Add the pineapple chunks and onion around the pork loin.
  5. Cover the slow cooker and cook on low for 8 hours.
  6. Shred the pork loin and mix with the pineapple and onions before serving.
  7. Serve pork loin with rice or stir-fried veggies.
