Sugar snap peas, bell pepper strips, and a sesame and Hoisin sauce dressing come together to make this delicious and crunchy Asian Sugar Snap Pea Salad!

I made flounder for dinner one night this week and originally planned on making rice as our side dish. I wasn’t in the mood for rice though. I wanted something fresh and something crunchy. I had sugar snap peas to use (I had purchased them at a farm stand during my recent trip to Lancaster) and decided to turn them into a salad.
I started digging around in my fridge and cabinets to find other ingredients that I could include in this salad. I ended up making a colorful, Asian inspired sugar snap pea, bell pepper, and green onion salad tossed with a sesame and Hoisin sauce dressing. It was really delicious!
Hoisin sauce is something that I often keep in our fridge. What’s Hoisin sauce? Think of it as an Asian barbecue sauce. This thicker style sauce is typically used in dipping sauces, stir fries, and also in marinades or glazes for meats. Hoisin sauce is kind of salty, kind of sweet, and has an umami flavor that’s all its own.
Asian Sugar Snap Pea Salad
This salad encompasses all of that slightly sweet, slightly salty flavor with a delightful crunch. It’s a light salad that’s perfect for summer dining and even better if you can make it with fresh garden ingredients (we should be able to use garden snap peas and bell peppers in this salad soon)!
To make this salad, start by taking snap peas, cutting them in half, and placing them into a medium bowl. Then, thinly sliced a red bell pepper and add it to the bowl of snap peas.
I wanted to mix up an Asian inspired dressing, so I added Hoisin sauce, olive oil, apple cider vinegar, ground ginger, and sesame oil (a little goes a long way) to a small bowl and mixed it all together.
Pour the Hoisin dressing over the snap peas. Then, mix in some sesame seeds and chopped green onion.
Chill the salad in the fridge until it’s time to serve it. This is a salad that’s better right out of the fridge. Then, serve with another light sprinkle of sesame seeds on top, if desired.
- 1 - 8 oz. bag sugar snap peas, cut in half
- 1 red bell pepper, cut into strips
- 1/4 cup Hoisin sauce
- 2 tbsp. olive oil
- 3 tbsp. apple cider vinegar
- 1/2 tsp. sesame oil
- 1/2 tsp. ground ginger
- 1 tsp. sesame seeds
- 1-2 green onions, chopped
- Add the sugar snap peas and pepper strips to a medium bowl.
- In a small bowl, mix the Hoisin sauce, olive oil, apple cider vinegar, ginger, and sesame oil together. Pour it over the snap peas and peppers.
- Mix in the sesame seeds and green onions.
- Serve salad chilled with an extra sprinkle of sesame seeds on top, if desired.
Every once in a while, I want something other than a regular leafy green salad. This snap pea salad is so crunchy and flavorful! It’s a delicious, Asian inspired side salad that works well with light summer dishes!
