Happy Memorial Day! No matter how you’re kicking off the unofficial start to Summer, there’s bound to be some sort of chip and dip combo served during your celebration. While some people have no control when it comes to cookies and sweets, I can’t be left alone with a big bowl of tortilla chips and nice, chunky salsa. I will devour both of them! It was a mistake to taste-test this salsa. I could have eaten the whole bowl!
Making your own salsa allows you to control the heat and, of course, what ingredients you want to add into it. I love fruit salsas, so I decided to use up some fruit I had in my fridge. I made a Tropical Fruit Salsa using mango, pineapple, peaches, lime juice and herbs from my garden. It turned out to be a really delicious combo!
- - 1 cup pineapple, diced
- - 1 mango, diced
- - 2 small peaches, diced
- - 2 limes, juiced
- - 1 jalapeno, seeded and diced
- - Fresh parsley, cilantro, and chives or scallions, chopped
- Add all ingredients into a bowl.
- Stir to combine and serve.
Add another jalapeño to the salsa if you want more heat. You could also add some diced red onion, if you like it. Serve this Tropical Fruit Salsa with tortilla chips or use it to top grilled chicken or fish!
Hopefully I’ll be able to make another fruit salsa using fresh berries from our garden in another few weeks (the raspberries and blueberries are on their way)! But for now, enjoy this Tropical Fruit Salsa and your Memorial Day!
